Okay, I’m going to come right out and say it, these o’henry bars are probably the best tasting dessert I’ve ever made. Now, that’s saying something, since I’ve made a lot of desserts, aaand I’m not really one to boast. Uh oh, maybe I’ve built this up too much. Let’s start again. This is pretty, prettttty, pretty good. 🙂 Note to self: use more Larry David quotes in future posts.

I’ve met several Americans in my travels, and on many occasions, O’Henry bars have come up in conversation, because, well, why wouldn’t they? I often get a confused look from people when they hear mention of them. Sadly, our neighbours to the south can’t buy them there any more, or ketchup chips for that matter. Strange, right? Even the episode of Seinfeld referencing O’Henry’s wasn’t enough to keep them in circulation. At least they’ll be one step closer to the chocolatey, pb, caramel goodness with this recipe.

I’m thankful to have people in my life that motivate me to come up with recipes like this. It doesn’t really take much convincing on their part, just, “Hey, you should try to make your own version of this.” Challenge accepted. And then, they’re always kind enough to taste test my creations for me. Hey, wait a minute, maybe that was their plan all along. Hmmm. My point is, this recipe wouldn’t exist without a little encouragement from some awesome people. Thanks, dudes.

(Almost) Raw O'Henry Bars
Makes 6 mini bars

Peanut Base
  1. ⅓ cup Raw Cashews
  2. 4 Tbsp Peanut Butter (100% Peanuts, no additives)
  3. 1 Tbsp Honey or Maple Syrup
  4. 1 ½ tsp Nutritional Yeast
  5. Pinch of Salt
Caramel Layer
  1. 2/3 cup Dates, soak in hot water for 30 minutes
  2. 1 Tbsp Almond Butter
  3. ½ Tbsp Maple Syrup
  4. 1 tsp Vanilla
  5. Pinch of Salt
  6. ¼ cup Peanuts (or ⅓ cup for more crunch)
Chocolate Coating
  1. ¼ cup Coconut Oil
  2. 2 Tbsp Maple Syrup
  3. ¼ cup Cocoa Powder
  4. ½ tsp Vanilla
  5. Pinch of Salt
  1. First start by soaking the dates in hot water, so they soften and are easier to blend.
  2. Peanut Base:Grind the cashews into a powder in the food processor, then add remaining ingredients and pulse until combined. Scoop into 1 Tbsp balls and flatten into 6 mini rectangles on a plate lined with parchment paper.
  3. Caramel: Combine caramel ingredients (except peanuts) in food processor and blend until mixed. Should be thick and creamy. You may need to add a little water if the dates weren’t soaked long enough.
  4. Assembly: Divide half of the peanuts on top of the cashew/pb layer, then add a layer of caramel, and top with remaining peanuts. Place in freezer while you get your chocolate mix together.
  5. Chocolate: Melt coconut oil in a double boiler or pot on the stove, then add remaining chocolate ingredients and whisk until completely mixed. When your pb/caramel mix is chilled and firm, dip one by one in chocolate and remove with a fork and place back on plate, and into the freezer to set. They should be ready in a minute or two. Enjoy!
  1. *You can also melt coconut oil in the microwave if you use one
  2. *If your dates are soft, skip the soaking process

    1. Yayyyy! So glad you liked them! Of all the desserts on the blog, that one’s still my favorite….and the O’henry ice cream. Also, the ketchup chips are worth the visit, even if you cross the border, eat chips, then head back across the border. 🙂

I can’t wait to make it, I just can’t… But I’m sadly missing the cashews (we just finished them last night as a post-run snack!!) so do you think a substitution will work? For example, starting directly with coconut flour? ♥♥♥

    1. Thank you, Francesca!! You could use ground peanuts as a replacement, or coconut flour. I’ve even just omitted it completely at times (I’ve made these A LOT) and it works fine. The mixture will be a bit softer if you omit it, but not a big deal. Happy holidays!! 🙂

        I never had an O’Henry and yet they remind me of something super good from my childhood – but your almost raw version is better! And healthier – so much that I think we had an overdose, both my husband and I 😀
        that said, I will make them again tonight ;D they are just too good! And in the meantime I’ll go out and get some cashews to make the original version :> happy holidays to you ♥
