Okay, I’m going to come right out and say it, these O’Henry bars are probably the best tasting dessert I’ve made to date. Now, that’s saying something, since I’ve made a lot of desserts, aaand I’m not really one to boast. Uh oh, maybe I’ve built this up too much. Let’s start again. These chocolate bars are pretty, prettttty, pretty good. Note to self: use more Larry David quotes in future posts.

I’ve met several Americans in my travels, and on many occasions, O’Henry bars have come up in conversation, because naturally chocolate has to come up at some point, right? I often get a confused look from people when they hear mention of them. Sadly, our neighbors to the south can’t buy them there any more, or ketchup chips for that matter. Strange, right? Even the episode of Seinfeld referencing O’Henry’s wasn’t enough to keep them in circulation. At least they’ll be one step closer to the chocolatey, pb, caramel goodness with this recipe.

I’m thankful to have people in my life that motivate me to come up with recipes like this. It doesn’t really take much convincing on their part, just, “Hey, you should try to make your own version of this.” Challenge accepted. And then, they’re always kind enough to taste test my creations for me. Maybe that was their plan all along, but either way, I’m grateful for their encouragement to help make these recipes see the light of day.

(Almost) Raw O'Henry Bars

Makes 6 mini bars
Ingredients
Peanut Base
  • cup Raw Cashews
  • 4 Tbsp Peanut Butter (100% Peanuts, no additives)
  • 1 Tbsp Honey or Maple Syrup
  • 1 ½ tsp Nutritional Yeast
  • Pinch of Salt
Caramel Layer
  • 2/3 cup Dates (soak in hot water for 30 minutes)
  • 1 Tbsp Almond Butter
  • ½ Tbsp Maple Syrup
  • 1 tsp Vanilla
  • Pinch of Salt
  • ¼ cup Peanuts (or ⅓ cup for extra crunch)
Chocolate Coating
  • ¼ cup Coconut Oil
  • 2 Tbsp Maple Syrup
  • ¼ cup Cocoa Powder
  • ½ tsp Vanilla
  • Pinch of Salt
Instructions
  1. First start by soaking the dates in hot water, so they soften and are easier to blend.
  2. Peanut Base: Grind the cashews into a powder in the food processor, then add remaining ingredients and pulse until combined. Scoop into 1 Tbsp balls and flatten into 6 mini rectangles on a plate lined with parchment paper.
  3. Caramel: Combine caramel ingredients (except peanuts) in food processor and blend until mixed. Should be thick and creamy. You may need to add a little water if the dates weren’t soaked long enough.
  4. Assembly: Divide half of the peanuts on top of the cashew/pb layer, then add a layer of caramel, and top with remaining peanuts. Place in freezer while you get your chocolate mix together.
  5. Chocolate: Melt coconut oil in microwave or in a pan on the stove, then add remaining chocolate ingredients and whisk until completely mixed. When your pb/caramel mix is chilled and firm, dip one by one in chocolate and remove with a fork and place back on plate, and into the freezer to set. They should be ready in a minute or two. Enjoy!
Recipe Notes

*If your dates are soft, skip the soaking process

**You can also melt 1/2 cup of chocolate chips rather than making your own. This will make them stable at room temperature as well.

Oh my goodness, what is this marvelous snack/recipe/holy grail you have here?! I can’t wait to make it, I just can’t… But I’m sadly missing the cashews (we just finished them last night as a post-run snack!!) so do you think a substitution will work?
