This week I’m doing something a little different on the blog. I dare say it’s even a little crazy. Since Valentine’s Day is next week, it got me thinking about what I was going to work on for a recipe. After compiling a list of ideas, my indecisiveness got the better of me and I was unable to narrow down my list beyond 5 recipes. So, I’m posting 5 recipes this week. Yes, FIVE!

If you’re like me and don’t celebrate Valentine’s Day, but like cooking and eating good food, you should also stay tuned because lets face it, you don’t need a special occasion to eat heart shaped chocolates.
Let’s kick off day 1 with this chocolate mint smoothie bowl. Who wouldn’t love a creamy, chocolaty, smoothie bowl served to them first thing in the morning? Bonus points if you serve it to your significant other in bed.
You may have seen a number of smoothie bowls out there (especially if you frequent Instagram) that appear to have taken all morning to prepare, only to be inhaled within minutes, leaving that beautiful piece of artwork to be nothing more than a delicious memory. As much as I love staring at those stunning bowls, I wanted to take a more minimalistic approach and create something just as eye catching with a fraction of the effort.
This smoothie bowl is so quick and easy to prepare. The frozen banana and avocado give you the perfect creamy consistency and the touch of almond butter really enhances the chocolate flavor. The combination of raspberries and mint make a great garnish as they resemble roses poking up from the chocolaty ground.

- 4 ripe Bananas frozen in small pieces
- 1 cup Almond Milk or milk of choice
- ½ Avocado
- ⅛ cup Almond Butter
- ⅛ cup Cocoa Powder
- Handful of fresh mint 8-10 large leaves
- Mint Leaves
- Pomegranate Arils
Combine all smoothie bowl ingredients in a blender or food processor and blend until smooth. If using a blender, you may have to shut it off and stir the mixture around with a spoon and blend again until incorporated. You can also add more milk if you want to thin it out. I find it easiest to use a food processor.
Divide mixture between two bowls and add toppings. Eat immediately.
