Ingredients

  • teaspoon vegetable oil 
  • 1.3 lb chicken breast boneless skinless cut into 3/4-inch pieces
  • large carrots cut into 1/8-inch slices (2 cups)
  • medium zucchini cut into 1/8-inch slices (2 cups)
  • tablespoons soya sauce 
  • 0.5 cup spring onion sliced
  • oz sharp cheddar cheese shredded reduced-fat

Directions

  1. Heat 12-inch nonstick skillet over medium high heat.
  2. Add oil; tilt skillet to coat bottom.
  3. Add chicken; cook 4 to 5 minutes or until no longer pink in center, stirring frequently.
  4. Remove from skillet; cover to keep warm.
  5. In same skillet, cook carrots and zucchini 5 minutes or until crisp-tender, stirring frequently.
  6. Add chicken and soy sauce; toss until chicken and vegetables are coated with soy sauce.
  7. Remove from heat.
  8. Sprinkle with onions and cheese. Cover; let stand 2 minutes to melt cheese.
