Ingredients

  • tablespoons brown sugar 
  •  eggs beaten
  • cloves garlic finely chopped
  • pound ground chicken 
  • pound pd of ground turkey 
  • 0.3 cup catsup 
  • 0.5 cup catsup 
  • tablespoons olive oil 
  • 0.3 cup onion finely chopped
  • 1.5 cups panko bread crumbs crispy
  • 0.3 cup parmesan cheese grated
  • servings salt 
  • tablespoons worcestershire sauce 
  • small zucchini finely chopped

Equipment

Directions

  1. Heat oven to 350F.
  2. Heat olive oil in a saut pan over medium high heat.
  3. Add the zucchini, onions, and garlic.
  4. Sprinkle with salt and pepper. Saut for about 5 minutes or until onions are softened. Set the mixture aside to cool.
  5. In a bowl combine all the meatloaf ingredients including the cooled vegetable mixture with a good sprinkle of salt and pepper.
  6. Mold into a loaf in a 9x13 sprayed or greased glass, baking dish.
  7. In a small bowl, whisk together the ketchup, Worcestershire sauce and brown sugar.
  8. Brush the mixture all over the loaf.
  9. Bake the meatloaf in the center of the oven uncovered for 50 to 60 minutes. Youll know it is done when an instant thermometer inserted in the center of the loaf reaches 165F.
