  • large bell pepper green red
  • cup olives whole pitted ripe
  • ounces mozzarella cheese cut into cubes
  • 0.3 cup vegetable oil 
  • 0.3 cup juice of lemon 
  • tablespoons parsley fresh chopped
  • teaspoon oregano dried fresh chopped
  • teaspoon basil dried fresh chopped
  • 0.5 teaspoon sage dried fresh chopped
  • 0.5 teaspoon salt 
  • 0.1 teaspoon pepper 
  • large garlic clove finely chopped

Directions

  1. Set oven control to broil.
  2. Broil bell peppers with tops about 5 inches from heat, turning occasionally, until skin is blistered and evenly browned.
  3. Place peppers in a plastic bag and close tightly.
  4. Let stand 20 minutes.
  5. Remove skin, stems, seeds and membranes from peppers.
  6. Cut peppers into 1/4-inch strips.
  7. Place peppers, olives and cheese in glass bowl or jar.
  8. Shake remaining ingredients in tightly covered container; pour over pepper mixture. Cover and refrigerate at least 4 hours to blend flavors, stirring occasionally.
  9. Store tightly covered in refrigerator up to 2 weeks.
