  • slices bacon 
  • 0.3 teaspoon pepper black freshly ground
  • tablespoon butter 
  • cups rotini hot cooked uncooked ( 8 ounces pasta)
  • teaspoons dijon mustard 
  • 1.5 teaspoons flour all-purpose
  •  garlic cloves minced
  • 0.5 teaspoon kosher salt 
  • cup milk 1% low-fat
  • tablespoon olive oil 
  • cup onion finely chopped
  • 0.8 cup peas green frozen thawed
  • ounces sharp cheddar cheese shredded

Directions

  1. Cook bacon in a large nonstick skillet over medium heat until crisp.
  2. Remove bacon from pan; crumble. Increase heat to medium-high.
  3. Add butter and oil to drippings in pan; swirl to coat.
  4. Add onion; saut for 5 minutes, stirring occasionally.
  5. Add garlic; saut for 30 seconds, stirring constantly.
  6. Add flour, and saut 1 minute, stirring frequently. Stir in mustard. Gradually add 1 cup milk, stirring constantly with a whisk, and bring to a boil. Cook for 3 minutes or until slightly thickened.
  7. Remove from heat.
  8. Let stand 5 minutes.
  9. Add cheese, salt, and pepper, stirring with a whisk until smooth.
  10. Place pan over low heat. Stir in bacon, pasta, and peas; cook for 1 minute or until thoroughly heated, tossing to coat.
