  • 0.5 cup butter 
  • 0.8 cup carrots finely chopped
  • 0.5 cup celery finely chopped
  • 0.3 cup onion finely chopped
  • cup oats 
  • 0.5 teaspoon paprika 
  • 0.1 teaspoon pepper black
  • 0.1 teaspoon ground pepper red (cayenne)
  • cups chicken broth (from 32-oz carton)
  • cup whipping cream 
  • 16 oz sharp cheddar cheese shredded
  • 12 oz beer canned

Directions

  1. In 4-quart Dutch oven, melt butter over medium heat.
  2. Add carrots, celery and onion; cook about 10 minutes, stirring occasionally, until celery and onions are transparent.
  3. Stir in flour, paprika, black pepper and ground red pepper.
  4. Add broth; heat to boiling over medium heat. Boil and stir 1 minute.
  5. Reduce heat; stir in whipping cream and cheese.
  6. Heat until cheese is melted, stirring occasionally. Stir in beer. If desired, serve with popcorn.
