  • teaspoons double-acting baking powder 
  • 0.8 teaspoon baking soda 
  • tablespoons butter cold
  • 0.5 cup currants dried
  •  eggs lightly beaten
  •  egg yolk 
  • 1.8 cups flour all-purpose
  • teaspoon lemon zest grated
  • teaspoon orange zest grated
  • 0.5 teaspoon salt 
  • 0.8 cup cream sour
  • 0.3 cup sugar 
  • tablespoons water

Directions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; cut in butter until mixture resembles coarse crumbs.
  2. Whisk the egg, sour cream, lemon peel and orange peel; stir into crumb mixture just until moistened. Stir in currants. Turn onto a floured surface; knead 10 times.
  3. Roll into a 7-in. circle In a small bowl, beat egg yolk and water.
  4. Brush over dough.
  5. Cut into six wedges.
  6. Transfer to a greased baking sheet.
  7. Bake at 400° for 15 minutes or until golden brown.
  8. Serve warm.
