There is something truly magical about the aroma of browned butter, a nutty, hazelnut-scented fragrance that instantly transforms a simple dessert into an extraordinary culinary experience. This Apple Brown Butter Tart is the perfect embodiment of that magic, offering a rich, flaky pastry shell that cradles a luscious, caramelized filling. The secret lies in the preparation of the butter; by cooking it slowly until it begins to brown and release its aromatic oils, you create a flavor profile that is far superior to using standard melted butter. Paired with tender, spiced Golden Delicious apples and plump golden raisins, the filling becomes a harmonious blend of sweet, tangy, and deeply savory notes that dance on the palate.

What sets this tart apart is its unique assembly technique. Rather than a traditional single-layer crust, this recipe invites you to create a rustic, two-part structure. You start by spreading a layer of the velvety brown butter custard directly onto the bottom of the tart pan, establishing a creamy foundation. Next, you nestle the warm, sautéed apple mixture on top, folding the excess dough over the fruit to create a protective, golden lid. This method ensures that every bite offers a delightful contrast between the crisp, buttery pastry and the soft, flavorful fruit compote.

While the preparation time of nearly three hours might seem daunting, the process is largely hands-off, allowing you to prepare components in advance. The dough needs time to rest, developing its signature flakiness, while the apples can be cooked ahead of time to let their flavors meld. The result is a sophisticated dessert that is surprisingly approachable for home cooks. Whether served warm or at room temperature, this tart is a showstopper that guarantees to impress guests and satisfy even the most discerning sweet tooth. It is a celebration of autumn flavors, crafted with patience and a love for the classics.

Directions

  1. Watch how to make this recipe.
  2. Special equipment: 9-inch tart pan
  3. Preheat the oven to 350 degrees F.
  4. Combine the butter, flour, and salt in a food processor. Pulse until the mixture looks like Parmesan cheese.
  5. Drizzle in half the cold water and pulse until the mixture forms a rough ball, adding the remaining water if needed.
  6. Remove the dough from the food processor, form into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  7. For the filling: In a small saucepan, melt the butter and cook it until it starts to brown and begins to smell like hazelnuts.
  8. Transfer the butter to the bowl of a stand mixer equipped with a paddle.
  9. Add the sugar and beat together on medium speed. Gradually add the flour. Once the flour has combined, add the eggs one at a time. Beat in the vanilla bean seeds.
  10. For the apples: In a large saute pan, melt the butter over medium heat.
  11. Add the apples and sugar and cook until the apples start to soften, 6 to7 minutes. Pull the pan off the burner and add in the brandy. Return to the fire and flambe, if desired, or just let the alcohol burn off. Toss in the raisins.
  12. Remove the dough from the fridge 15 minutes before ready to use, this will allow the dough to soften and come to room temperature.
  13. Dust a clean work surface with flour.
  14. Roll the dough out 1/8-inch thick and lay it in the tart pan with lots of overhang on the sides. Schmear half the filling into the bottom of the tart pan and top with the apple mixture. Fold the extra dough over the top of the apples.
  15. Brush the dough with the egg wash.
  16. Bake the tart in the oven until the top is golden brown and slightly crispy, 45 to 50 minutes.
