  • 0.5 cup cornmeal 
  • large eggs lightly beaten
  • 1.3 cups flour all-purpose
  • 1.8 cups golden delicious apple shredded
  • 0.3 teaspoon ground cinnamon 
  • teaspoon ground cinnamon

  • 0.8 cup buttermilk low-fat

  • 0.3 cup sugar

Directions

  1. Preheat oven to 40
  2. Combine first 8 ingredients in a large bowl; make a well in center of mixture.
  3. Combine apple, buttermilk, oil, and egg in a bowl; stir well.
  4. Add to dry ingredients, stirring just until moist.
  5. Divide batter evenly among 12 muffin cups coated with cooking spray.
  6. Combine remaining ingredients; sprinkle over muffins.
  7. Bake at 400 for 20 minutes or until golden.
  8. Remove from pans immediately.
  9. Serve warm.
