  • 0.5 cup apricot preserves 
  • 12  pats butter unsalted
  • 0.5 cup pink lemonade kool-aid 
  • 17.5 ounce puff pastry frozen thawed
  •  apples red thinly sliced
  • 0.5 cup caster sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cut puff pastry into 12 equally-sized squares and arrange on a baking sheet.
  3. Dip apple slices in lemonade and place diagonally onto each puff pastry square; top each with 1 pat butter.
  4. Sprinkle superfine sugar over each square.
  5. Bake in the preheated oven until tartlet edges are golden, about 12 minutes.
  6. Bring apricot jam to boil a saucepan; cook and stir until jam is thinned, 1 to 2 minutes.
  7. Brush jam onto warm tartlets; sprinkle each with sugar crystals.
