Ingredients

  • 7.5 ounces baby carrots 
  • teaspoon baking soda 
  • 0.3 cup butter softened
  • 0.5 cup carrots fresh
  • cups powdered sugar 
  • 12 ounce cream cheese softened
  •  eggs 
  • cup flour all-purpose
  • 0.8 teaspoon ground cinnamon 
  • 0.3 cup raisins 
  • 0.5 teaspoon salt 
  • teaspoons vanilla extract 
  • 0.8 cup vegetable oil 
  • 0.3 cup walnut pieces chopped
  • cup granulated sugar white

Directions

  1. Mix together the sugar, cinnamon, eggs, vanilla and oil in a large bowl.
  2. Add in the baking soda, salt and flour. Stir in the jar of baby carrots, raw carrots, raisins and walnuts.
  3. Mix well.
  4. Bake in a greased and floured 13x9 inch pan at 350 degrees F (175 degrees C) for 20 minutes. Check after 20 minutes by inserting clean knife into center. Knife should come out clean. Cool thoroughly before cutting.
  5. To Make Frosting: Cream together the cream cheese, 1/4 cup butter, confectioners' sugar and vanilla. Frost cooled bars.
