Ingredients

  • 12 ounces bacon 
  • tablespoon balsamic vinegar 
  • pound pasta 
  • tablespoons olive oil extra virgin extra-virgin
  • cups onion red halved sliced
  • 0.7 cup parmesan cheese grated
  • 12 cups swiss chard stemmed chopped

Directions

  1. Cook linguine in large pot of boiling saltedwater until tender but still firm to bite, stirring occasionally.
  2. Drain, reserving 1 cup pasta cooking liquid.
  3. Meanwhile, cook bacon in heavy large pot over medium heat until beginning to crisp, about 10 minutes.
  4. Transfer to paper towels to drain.
  5. Drain all but 2 tablespoons bacon drippings from skillet.
  6. Add onion and saut over medium-high heat until softened, about 7 minutes.
  7. Add Swiss chard and sprinkle with salt and pepper.
  8. Add pasta cooking liquid to skillet. Toss until chard is wilted and tender, about 4 minutes.
  9. Sprinkle vinegar over; cook 1 minute.
  10. Add linguine and oil to sauce in pot and toss to coat.
  11. Transfer to large bowl.
  12. Sprinkle with bacon and cheese. Season to taste with salt and pepper.
