  •  kiwi fruit peeled chopped
  • cup mangos pitted chopped
  • cup papaya peeled seeded chopped
  •  jalapeno seeded finely chopped
  • cup pineapple chunks 
  • tablespoon onion red finely chopped
  • tablespoon cilantro leaves fresh chopped
  • tablespoons juice of lime 
  • 0.5 cup onion chopped
  • oz mozzarella cheese shredded
  • 1.5 cups milk 
  •  eggs 
  • 0.3 cup flour all-purpose
  • 0.5 teaspoon double-acting baking powder 
  • 0.5 teaspoon basil dried
  • 0.3 teaspoon salt

Directions

  1. In large glass or plastic bowl, mix all salsa ingredients. Refrigerate until serving time.
  2. Heat oven to 350°F. Grease 9-inch glass pie plate or spray with cooking spray.
  3. Sprinkle onion and cheese in pie plate. In blender, place all remaining omelet ingredients. Cover and blend on medium-high speed about 30 seconds or until smooth.
  4. Pour into pie plate.
  5. Bake uncovered about 40 minutes or until knife inserted in center comes out clean.
  6. Let stand 5 minutes before serving.
  7. Serve with salsa.
