  • 1.5 cups coarsely bananas ripe mashed ( 3)
  • 0.5 cup coconut flakes 
  • large eggs 
  • 0.3 teaspoon ground cinnamon 
  • 0.3 teaspoon kosher salt 
  • 0.5 cup greek yogurt plain 2%
  • cup sugar 
  • teaspoon vanilla extract 
  • tablespoons vegetable oil 
  • 0.5 cup walnut halves 
  • 1.5 cups flour whole-wheat

Directions

  1. Preheat oven to 350F.
  2. In a bowl, whisk together first 4ingredients.
  3. In a large bowl, beat sugar and eggs until thick. Stir in oil, bananas, yogurt and vanilla. Fold in flour mix, coconut and walnuts.
  4. Pour into greased 9-by 5-inch pan.
  5. Bake for 75minutes.
  6. Let cool on rack and serve.
