  • teaspoon double-acting baking powder 
  • teaspoon baking soda 
  • medium size bananas ripe mashed
  • tablespoons butter melted
  •  eggs lightly beaten
  • oz fruit bits dried
  • 0.5 teaspoon ground cinnamon 
  • 0.5 cup pecans chopped
  • 0.5 cup sugar 
  • 1.5 cups flour whole wheat

Directions

  1. Place pecans in a single layer in a jelly-roll pan.
  2. Bake at 350 for 8 to 10 minutes or until lightly browned.
  3. Combine flour and next 3 ingredients in a large bowl.
  4. Combine sugar and next 3 ingredients in a small bowl; add to flour mixture, stirring just until dry ingredients are moistened. Stir in pecans and fruit bits.
  5. Pour mixture into an 8 1/2- x 4 1/2-inch loaf pan coated with cooking spray.
  6. Bake at 350 for 55 to 60 minutes or until a wooden pick inserted in center of bread comes out clean. Cool in pan on wire rack 10 minutes; remove from pan, and cool on wire rack 2 hours or until completely cool.
