  • 0.5 teaspoon baking soda 
  • teaspoon double-acting baking powder 
  • 0.3 teaspoon salt 
  • 0.5 teaspoon ground cinnamon 
  • 0.3 teaspoon nutmeg freshly ground
  • packets rolled oats unflavored instant flavored
  •  eggs 
  • tablespoons canola oil 
  • cup bananas mashed ( 3 medium)
  • 0.5 cup buttermilk low-fat (or tbsp vinegar added to milk)

Directions

  1. Preheat the oven to 375 f.
  2. Prepare a 12 cup muffin pan with paper paper liners, a thin coating of oil or cooking spray.
  3. Whisk the flour, sugar, baking soda, baking powder spices and oats into a large bowl.
  4. In another bowl beat the eggs, oil, mashed bananas and buttermilk.
  5. Quickly fold this mixture into the dry ingredients, mixing until just combined.
  6. Divide the mixture between the muffin cups and bake for 15-20 minutes until a toothpick inserted comes out clean.
  7. Cool for 5 minutes in the pan, then turn out onto a wire rack and cool completely.
