  • cup banana ripe mashed ( 2 large)
  • large eggs lightly beaten
  • 1.5 cups flour all-purpose
  • 0.3 cup buttermilk low-fat
  • 0.8 cup regular oats 
  • 0.3 teaspoon salt 
  • 0.7 cup sugar 
  • teaspoon vanilla extract 
  • 0.3 cup vegetable oil

Directions

  1. Preheat oven to 35
  2. Lightly spoon flour into dry measuring cups; level with a knife.
  3. Combine flour and the next 4 ingredients (through salt) in a large bowl, stirring well with a whisk. Stir in oats.
  4. Combine mashed banana, buttermilk, vegetable oil, vanilla extract, and eggs; add to flour mixture. Stir just until moist.
  5. Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  6. Bake at 350 for 55 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.
