  •  corn tortillas 
  • servings chipotle crema 
  • cup flour all-purpose
  • teaspoon coarsely ground pepper 
  • servings garnishes: lime wedges fresh shredded chopped
  • pound salmon fillet cut into pieces
  • teaspoon sea salt 
  • servings vegetable oil

Directions

  1. Wrap tortillas in foil, and bake at 200 for 10 to 15 minutes or until warm.
  2. Combine flour and next 3 ingredients in a large, shallow bowl.
  3. Let stand 5 minutes.
  4. Heat 1 inch oil in a 10-inch heavy pot (2 to 3 inches deep) over moderate heat until a deep-fat thermometer registers 36
  5. Dip fish into batter to coat, draining excess. Fry fish in batches, turning once, 4 to 5 minutes or until golden.
  6. Drain on paper towels.
