  • 1.5 teaspoons double-acting baking powder 
  • pounds blueberries fresh
  • 0.5 cup crème fraîche sour
  • 1.5 cups flour all-purpose
  • 0.5 teaspoon kosher salt 
  • tablespoons juice of lemon fresh
  • tablespoon lemon zest finely grated
  • tablespoons sugar 
  • tablespoons butter unsalted chilled cut into 1/2" pieces ()

Directions

  1. Preheat oven to 375°F.
  2. Whisk 1 1/2 cupsflour, 3 tablespoons sugar, baking powder,and salt in a large bowl.
  3. Add butter;using your fingertips, incorporate untilonly pea-size lumps remain. Gently mixin crème fraîche. Knead in bowl untila biscuit-like dough forms, 5–7 turns(overmixing will make dough tough).
  4. Combine remaining 1 cup sugar,remaining 3 tablespoons flour, berries, juice,and zest in a large bowl. Toss to coat.
  5. Pour into an 8x8x2" glass baking dishor divide among six 6-ounce ramekins.Tear biscuit topping into quarter-sizecrumbles; scatter over berries.
  6. Bake cobbler until juices are thickand bubbling and topping is cookedthrough and deep golden brown, 20–25minutes for ramekins or 45–50 minutesfor baking dish.
  7. Let cool for at least1 hour.
