Ingredients

  • 1.5 cups chicken broth ready-to-serve canned
  • 0.3 cup flour all-purpose
  • cup madeira wine 
  • tablespoons butter 
  • 0.3 cup orange juice unsweetened
  • 0.1 teaspoon pepper freshly ground
  • 0.3 teaspoon pepper freshly ground
  • 0.1 teaspoon salt 
  • 0.5 teaspoon salt 
  • 24 ounce skinned 
  • tablespoons vegetable oil 
  • 0.5 cup whipping cream

Directions

  1. Sprinkle chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper. Dredge chicken in flour.
  2. Combine margarine and oil in a large skillet.
  3. Place over medium-high heat until margarine melts.
  4. Add chicken, and cook 4 to 5 minutes on each side or until done.
  5. Transfer chicken to a serving platter, and keep warm.
  6. Discard pan drippings; add Madeira and orange juice to skillet. Cook over medium-high heat 6 minutes or until mixture is reduced to about 1/2 cup, deglazing pan by scraping particles that cling to pan.
  7. Add broth, and cook 10 minutes or until mixture is reduced to about 3/4 cup.
  8. Add cream, and cook 5 minutes or until mixture turns caramel colored and is reduced to about 1/4 cup. Stir in 1/8 teaspoon salt and 1/8 teaspoon pepper.
  9. Drizzle sauce evenly over chicken breast halves.
