  • 0.5 cup salad dressing italian
  • 0.8 lb portabello mushrooms fresh sliced
  • cups the salad mixed
  • oz goat cheese plain crumbled (goat)
  • oz mozzarella cheese shredded
  • slices bread french toasted cut in half
  •  roma tomatoes sliced (plum)

Directions

  1. Set oven control to broil. Spray broiler pan rack with cooking spray.
  2. Brush dressing on both sides of mushrooms; reserve remaining dressing.
  3. Place mushrooms on rack in broiler pan. Broil with tops 2 to 4 inches from heat 4 minutes; turn. Broil about 3 minutes longer or just until mushrooms are tender.
  4. Meanwhile, divide salad greens among 4 plates. In small bowl, mix cheeses; spread on toast.
  5. Place mushrooms on salad greens. Top with tomatoes.
  6. Drizzle with remaining dressing.
  7. Serve with toast.
