  • oz almonds sliced
  • 0.3 teaspoon pepper black
  • 1.3 cups bulgur 
  • oz apricot dried chopped
  • tablespoons parsley fresh coarsely chopped
  • 1.5 tablespoons olive oil 
  • 0.8 cup onion finely chopped
  • 0.8 teaspoon salt 
  • 0.5 tablespoon butter unsalted cut into pieces
  • 1.3 cups water

Directions

  1. Toast almonds in a dry small heavy skillet over moderate heat, stirring, until fragrant and pale golden, about 2 minutes.
  2. Cook onion in oil in a 3-quart heavy saucepan over moderate heat, stirring frequently, until softened and beginning to brown, about 8 minutes.
  3. Add bulgur and cook, stirring, 2 minutes.
  4. Stir in water, salt, and pepper and simmer, covered, 5 minutes.
  5. Remove from heat, then add apricots and butter and stir until butter is melted.
  6. Let stand, covered, 5 minutes. Stir in parsley and almonds.
