Ingredients

  • cups corn flakes/bran flakes fiber honey clusters®
  • 0.8 cup sugar 
  • 0.3 cup vegetable oil 
  • cup buttermilk 
  • teaspoons vanilla 
  •  eggs 
  • cup banana very ripe mashed (2 medium)
  • cups flour all-purpose
  • teaspoon baking soda 
  • 0.3 teaspoon salt

Directions

  1. Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan.
  2. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
  3. In large bowl, beat sugar and oil with electric mixer on medium speed until well mixed. On low speed, beat in buttermilk, vanilla and egg until smooth. Beat in bananas. Beat in flour, baking soda and salt until will blended.
  4. Stir in cereal just until mixed.
  5. Spread in pan.
  6. Bake 1 hour 10 minutes to 1 hour 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
  7. Remove from pan to cooling rack. Cool completely, about 2 hours, before slicing.
