  • 0.8 cup buttermilk chilled
  • 14 servings sea salt 
  • 0.5 cup spring onion finely chopped
  • 0.5 teaspoon pepper black for sprinkling
  • cups self raising flour 
  • tablespoons sugar 
  • 0.5 cup butter unsalted chilled melted cut into 1/2-inch cubes, plus 1 tablespoon butter (1 stick)
  • 0.5 cup cornmeal yellow

Directions

  1. Position rack in center of oven and preheatto 425°F. Line baking sheet with parchmentpaper.
  2. Combine buttermilk and green onionsin medium bowl.
  3. Whisk flour, cornmeal, sugar, and 1/2 teaspoon ground black pepper in large bowl to blend.
  4. Add 1/2 cup chilledbutter and rub in with fingertips until mixtureresembles coarse meal.
  5. Add buttermilkmixture and stir until moist clumps form.
  6. Gather dough together. Turn dough outonto floured surface and knead gently justto combine, about 3 to 4 turns.
  7. Roll out to3/4-inch thickness. Using floured 2-inch cookieor biscuit cutter, cut out rounds. Rerollscraps and cut out additional rounds.
  8. Place2 inches apart on prepared baking sheet.
  9. Brush tops of biscuits with melted butter.
  10. Sprinkle each lightly with coarse sea salt andground black pepper.
