  • 0.8 teaspoon double-acting baking powder 
  • 0.3 teaspoon baking soda 
  • large eggs lightly beaten
  • 1.3 cups flour all-purpose
  • 0.5 teaspoon ground cinnamon 
  • 1.3 cups buttermilk low-fat
  • tablespoons maple syrup 
  • 0.3 teaspoon salt 
  • tablespoon vegetable oil

Directions

  1. Lightly spoon flour into dry measuring cups; level with a knife.
  2. Combine flour and next 4 ingredients (flour through salt) in a large bowl.
  3. Combine buttermilk, syrup, oil, and egg; add to flour mixture, stirring until smooth. Fold in pear.
  4. Spoon about 1/4 cup batter onto a hot nonstick griddle or a large nonstick skillet. Turn pancakes when tops are covered with bubbles and edges look cooked.
