Ingredients

  • teaspoon baking soda 
  • cups purée of usa bartlett pear diced ripe peeled
  • 12 servings individually wrapped caramels 
  • large eggs 
  • cups flour all-purpose
  • 1.5 cups pecans coarsely chopped
  • teaspoon salt 
  • tablespoon sugar 
  • cups sugar 
  • teaspoons vanilla extract 
  • 1.3 cups vegetable oil

Directions

  1. Toss together pears and 1 tablespoon sugar; let stand 5 minutes.
  2. Beat eggs, 2 cups sugar, and oil at medium speed with an electric mixer until blended.
  3. Combine flour, salt, and baking soda, and add to egg mixture, beating at low speed until blended. Fold in pears, chopped pecans, and vanilla extract.
  4. Pour batter into a greased and floured 10-inch Bundt pan.
  5. Bake at 350 for 1 hour or until a wooden pick inserted in center of cake comes out clean.
  6. Remove from pan, and drizzle Caramel Glaze over warm cake.
