  • tablespoons all purpose flour 
  • 1.5 pounds fuji apples cored peeled quartered
  • 0.8 cup butter unsalted diced ()
  • 0.3 cup plus light
  • large egg white beaten to blend
  • large eggs 
  • 1.5 cups brown sugar packed ()
  • tablespoons orange juice chilled divided ()
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • teaspoons vanilla extract

Directions

  1. Blend flour, sugar, and salt inprocessor 5 seconds.
  2. Add butter. Usingon/off turns, blend until butter is reducedto small pea-size pieces.
  3. Add 4 tablespoonsorange juice. Blend, using on/off turns, untilmoist clumps form, adding more juice by teaspoonfuls if dough is dry. Gather doughinto ball; flatten into disk. Wrap in plasticand chill at least 1 hour. DO AHEAD: Canbe made 1 day ahead. Keep chilled.
  4. Roll out dough on floured surface to14-inch round.
  5. Transfer to 10-inch-diameterglass pie dish.
  6. Cut off all but1/2 inch of dough overhang. Fold dough edgeunder and crimp decoratively, forminghigh-standing rim. Freeze 10 minutes.DO AHEAD: Can be made 1 day ahead.Cover and refrigerate crust.
  7. Brush inside of crust with enoughbeaten egg white to coat.
  8. Preheat oven to 350°F.
  9. Whiskbrown sugar and butter in large ovenproofskillet over medium heat until butter melts,sugar dissolves, and mixture comes to boil.Boil 1 minute, whisking constantly.
  10. Removefrom heat. Arrange apples, rounded sidedown, in syrup.
  11. Bake 15 minutes; turn over.
  12. Bake until just tender, about 20 minuteslonger.
  13. Transfer apples to paper towels tocool slightly.
  14. Whisk syrup in skillet untilsmooth. Cool slightly and reserve. Maintainoven temperature.
  15. Mix sugar, flour, and saltin small bowl.
  16. Place eggs in medium bowl.Gradually whisk in reserved syrup fromapples.
  17. Add corn syrup, vanilla, and sugarmixture; whisk until smooth. Stir in pecans.
  18. Pour filling into crust. Arrange apples,rounded side up, atop filling.
  19. Bake pie until filling is set in center,covering edges with foil if browning tooquickly, about 1 hour 20 minutes.
  20. Transfer torack and cool completely. DO AHEAD: Canbe made 1 day ahead. Cover loosely with foiland let stand at room temperature.
