  • 1.5 tablespoons flour 
  • cups purée of usa bartlett pear diced generous cored ripe unpeeled finely
  • 4.5 tablespoons butter 
  • cups celery with leaves (preferably organic; 12 stalks) plus chopped leaves (for garnish) thinly sliced
  • 1.5 teaspoons thyme sprigs fresh chopped
  • 1.5 cups leek dark green chopped
  • cups chicken broth ()
  • small turkish bay leaf

Directions

  1. Melt butter in pot over medium-high heat.
  2. Add sliced celery, generous 3 cups dicedpears, leek tops, bay leaves, and thyme.Cover; cook until celery softens, stirringoccasionally, about 8 minutes. Toss in flour.
  3. Stir in 3 cups broth; bring to boil. Cover,reduce heat to medium-low, and simmeruntil celery is tender, about 20 minutes.
  4. Remove bay leaves from soup. Pureesoup in batches in blender until smooth.Return puree to same pot. Season to tastewith salt and pepper. Thin with more brothby 1/4 cupfuls, if desired. Rewarm briefly.
  5. Divide soup among bowls; garnish with1/2 cup finely diced pear and celery leaves.
