Ingredients

  • 0.8 cup apple sauce sweetened
  • 0.3 cup skim milk fat-free (skim)
  • tablespoons vegetable oil 
  •  eggs fat-free
  • cups corn flakes/bran flakes crushed oatmeal crisp®
  • 1.3 cups flour all-purpose
  • 0.5 cup brown sugar packed
  • teaspoon ground cinnamon 
  • teaspoon double-acting baking powder 
  • 0.8 teaspoon baking soda 
  • 0.5 cup cranberries dried sweetened
  • 0.5 teaspoon granulated sugar

Directions

  1. Heat oven to 400°F.
  2. Place paper baking cup in each of 12 regular-size muffin cups; spray bottoms with cooking spray.
  3. In large bowl, mix applesauce, milk, oil and egg until blended. Stir in remaining ingredients except coarse sugar just until moistened. Divide batter evenly among muffin cups.
  4. Sprinkle with coarse sugar.
  5. Bake 18 to 22 minutes or until golden brown.
