Ingredients

  • 0.7 cup apple juice 
  • 0.3 cup brown sugar packed
  • cup vanilla yogurt fat-free frozen
  • 0.8 cup cinnamon graham cracker crumbs low-fat divided crisp ( 8 crackers)
  • 0.5 teaspoon ground allspice divided
  • teaspoon ground cinnamon 
  • 0.5 teaspoon ground nutmeg 
  • ounces mascarpone cheese 
  • tablespoons raisins 
  • cups delicious apple red peeled thinly sliced ( 2 apples)
  • 0.3 teaspoon rum flavoring 
  • 1.5 teaspoons vanilla extract

Directions

  1. Combine first 6 ingredients and 1/4 teaspoon allspice in a medium saucepan. Cook 20 minutes over medium-low heat until apples are tender and mixture is slightly thick.
  2. Remove apple mixture from heat; let cool. Stir in 1/4 teaspoon allspice, vanilla, rum flavoring, and mascarpone.
  3. Spoon 1/4 cup apple mixture into each of 4 parfait glasses; sprinkle each with 1 1/2 tablespoons crumbs. Top each with 1/4 cup yogurt, 1/4 cup apple mixture, and 1 1/2 tablespoons crumbs.
  4. Garnish with additional mascarpone cheese, if desired.
  5. Serve immediately.
