Ingredients

  • lb baking potatoes boiling ( 6 medium)
  • 0.3 cup butter 
  • 0.5 cup onion chopped
  • tablespoon flour all-purpose
  • teaspoon salt 
  • 0.3 teaspoon pepper 
  • cups milk 
  • oz sharp cheddar cheese shredded
  • 0.3 cup breadcrumbs dry (any flavor)
  • serving paprika

Directions

  1. Heat oven to 375°F. Spray 1 1/2-quart glass baking dish with cooking spray. Scrub potatoes but do not peel.
  2. Cut into 1/8-inch slices.
  3. Melt butter in 2-quart saucepan over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly.
  4. Stir in milk.
  5. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  6. Remove from heat; stir in 1 1/2 cups of the cheese.
  7. Spread potatoes in baking dish.
  8. Pour cheese sauce over potatoes.
  9. Bake uncovered 1 hour.
  10. Mix remaining cheese and the bread crumbs; sprinkle over potatoes.
  11. Sprinkle with paprika.
  12. Bake uncovered 15 to 20 minutes longer or until top is brown and bubbly.
