Ingredients

  • 0.5 cup avocado peeled chopped
  • 9-inch flour tortillas ()
  • tablespoon cilantro leaves fresh chopped
  • 0.5 teaspoon garlic minced
  • 0.3 cup green onions chopped
  • 0.3 cup commercial mild taco sauce green
  •  jalapeno minced seeded
  • cups lettuce shredded finely
  • ounces monterrey jack cheese shredded divided
  • tablespoons olive oil extra-virgin
  • 0.5 cup onion chopped
  • 0.1 teaspoon pepper freshly ground
  • cups refried beans canned
  • 0.1 teaspoon salt 
  • 0.5 cup cup heavy whipping cream sour
  • 0.5 cup tomatoes seeded chopped

Directions

  1. Place a damp paper towel in center of a sheet of aluminum foil. Stack tortillas on paper towel. Cover stack with another damp paper towel; seal foil.
  2. Bake at 250 for 10 minutes.
  3. Saute 1/2 cup onion in hot olive oil in a large skillet over medium heat 5 minutes or until tender.
  4. Add jalapeno and garlic; saute 1 minute.
  5. Add refried beans, salt, and pepper, and cook 4 minutes or until thoroughly heated, stirring frequently.
  6. Spoon about 1/2 cup bean mixture down one side of each tortilla. Top evenly with 1 cup cheese, green onions, and taco sauce.
  7. Roll up tortillas; arrange seam side down in a lightly greased 13- x 9- x 2-inch baking dish. Cover and bake at 350 for 30 minutes.
  8. Sprinkle with remaining 1/2 cup cheese; bake, uncovered, 5 minutes or until cheese melts.
  9. Place 1/2 cup lettuce and 1 burrito on each plate. Top burritos evenly with avocado, tomato, cilantro, and sour cream.
