Ingredients

  • 1.5 cups granulated sugar 
  •  lemon zest grated
  •  eggs 
  • cups flour all-purpose
  • 0.5 teaspoon salt 
  • cup butter melted
  • teaspoons vanilla 
  • teaspoon almond extract 
  • 1.5 cups cherries sweet frozen organic cascadian farm®
  • 0.5 cup almonds sliced
  • tablespoons coarse salt white

Directions

  1. Heat oven to 350°F. Grease 9-inch cast-iron skillet with shortening or butter.
  2. In large bowl, mix granulated sugar and lemon peel.
  3. Add eggs, one at a time, beating with whisk after each addition. Stir in flour and salt.
  4. Add melted butter, vanilla and almond extract; stir with whisk until combined.
  5. Pour batter into skillet. Spoon cherries evenly over batter.
  6. Sprinkle with almonds and sanding sugar.
  7. Bake 30 to 35 minutes or until toothpick inserted near center comes out clean. Cool on cooling rack 5 minutes before cutting.
  8. Serve warm.
