  • 0.3 teaspoon pepper black freshly ground
  • tablespoon butter chilled cut into small pieces
  • tablespoon capers 
  • 16 ounce chicken cutlets 
  • tablespoons parsley fresh chopped
  • 0.3 teaspoon kosher salt 
  • tablespoon juice of lemon fresh
  • teaspoons lemon zest grated
  • 0.5 cup beef broth fat-free
  • tablespoon olive oil 
  • cup orzo pasta uncooked
  • 0.3 cup wine

Directions

  1. Cook orzo according to package directions.
  2. Drain. Stir in rind.
  3. While orzo cooks, heat a large skillet over medium-high heat.
