Chili con Carne is a hearty and satisfying dish perfect for lunch or dinner, especially when you want something rich in flavor and packed with protein. This recipe uses tender chunks of boneless chuck roast, slow-cooked with a blend of smoky poblanos, chipotle chile, and aromatic spices like cumin and oregano, creating a deep, complex taste that warms you from the inside out. The slow simmering process allows the beef to become incredibly tender while melding beautifully with the vibrant tomatoes and savory seasonings.

What makes this chili truly special is the addition of roasted poblanos, charred under the broiler to add an unmistakable smoky depth, and the chipotle chile in adobo, which gives it a subtle kick without overwhelming the dish. Fresh cilantro stirred in at the end adds a burst of freshness that balances out the smoky and spicy notes perfectly. A sprinkle of reduced-fat cheddar cheese on top lends a melty, creamy finish, making each bite a delightful combination of textures and flavors.

This chili serves ten people, making it ideal for gatherings or meal prepping for the week ahead. With its balanced caloric content and a good mix of protein, fats, and carbs, it’s not just comforting but also nourishing. Whether you’re a chili connoisseur or trying it for the first time, this recipe promises a rewarding cooking experience and a delicious meal that will satisfy your craving for comfort food with a flavorful twist.
