  • teaspoon butter 
  • pound flank steak trimmed
  • teaspoon flour all-purpose
  • teaspoons flat-leaf parsley fresh chopped
  •  garlic clove finely chopped
  • ounce gorgonzola cheese crumbled
  • teaspoon chipotle chili powder 
  • 0.7 cup milk 1% low-fat
  • teaspoon olive oil 
  • teaspoon paprika 
  • 0.3 teaspoon salt 
  • tablespoons shallots finely chopped

Directions

  1. Preheat broiler to high.
  2. Combine first 3 ingredients.
  3. Sprinkle steak with chipotle mixture.
  4. Place on a broiler pan; broil 5 minutes on each side.
  5. Let stand 5 minutes.
  6. Cut thinly across grain.
  7. Heat oil in a saucepan over medium heat.
  8. Add shallots and garlic; cook 1 minute.
  9. Add flour; cook 30 seconds, stirring.
  10. Add milk; boil. Cook until reduced by half.
  11. Remove from heat; stir in cheese and remaining ingredients.
