  • 0.5 teaspoon pepper black freshly ground
  • tablespoons butter 
  • 14.8 ounce corn cream-style canned
  • 0.8 cup celery chopped
  • 14 ounce fat-skimmed beef broth fat-free canned
  • tablespoons flour all-purpose
  • tablespoons parsley fresh chopped
  • teaspoons thyme sprigs fresh chopped
  •  garlic clove minced
  • 2.5 cups milk 2% reduced-fat
  • ounces lump crab meat 
  • 0.3 teaspoon grating nutmeg whole grated
  • cup onion chopped
  • 3.5 cups potatoes - remove skin red cubed (1-inch) ( 1 pound)
  • teaspoon salt

Directions

  1. Melt butter in a large saucepan over medium-high heat.
  2. Add onion, celery, and garlic; saut 4 minutes.
  3. Add potato; saut 1 minute.
  4. Sprinkle with flour; cook 1 minute, stirring constantly. Stir in milk, thyme, pepper, nutmeg, corn, and broth. Bring to a simmer over medium heat, stirring frequently. Cover, reduce heat, and simmer 20 minutes or until potato is tender, stirring occasionally. Stir in crab, parsley, and salt; cook 5 minutes, stirring occasionally.
