  • teaspoons double-acting baking powder 
  •  eggs 
  • 1.5 cups flour all-purpose
  • 0.3 cup milk 
  • cup extra sugar to coat cookies prior to baking 
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • teaspoon vanilla 
  • 0.3 cup vegetable oil

Directions

  1. Heat oven to 400F.
  2. Place paper baking cup in each of 12 regular-size muffin cups.
  3. In medium bowl, mix flour, sugar, baking powder and salt. In small bowl, mix oil, milk, egg and vanilla.
  4. Pour into flour mixture; stir just until combined. Stir in cinnamon chips. Divide batter evenly among muffin cups.
  5. Bake 18 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan to cooling rack.
  6. Serve warm, if desired.
