  • 0.5 teaspoon baking soda 
  • large eggs lightly beaten
  • 0.8 cup milk fat-free
  • tablespoon flour all-purpose
  • cups flour all-purpose
  • 0.1 teaspoon ground cinnamon 
  • 1.5 teaspoons orange rind grated
  • 1.5 cups raspberries 
  • 0.5 teaspoon salt 
  • 0.8 cup sugar 
  • tablespoon sugar 
  • teaspoon vanilla extract 
  • ounce carton vanilla yogurt low-fat
  • tablespoon vegetable oil

Directions

  1. Preheat oven to 40
  2. Lightly spoon 2 cups flour into dry measuring cups; level with a knife.
  3. Combine flour and next 6 ingredients in a bowl; stir well. Make a well in center of mixture.
  4. Combine milk, oil, vanilla, yogurt, and egg; add to dry ingredients, stirring just until moist.
  5. Toss raspberries with 1 tablespoon flour; gently fold into batter.
  6. Spoon batter into 18 muffin cups coated with cooking spray, filling three-fourths full.
  7. Combine 1 tablespoon sugar and 1/8 teaspoon cinnamon; sprinkle evenly over muffins.
