Ingredients

  • teaspoon double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.3 cup butter softened
  • cup buttermilk 
  •  eggs 
  • cups flour all-purpose
  • teaspoon ground cinnamon 
  • 0.5 teaspoon salt 
  • cup sugar divided
  • teaspoon vanilla extract

Directions

  1. In a large bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar.
  2. Add eggs, one at a time, beating well after each addition. Stir in vanilla.
  3. Combine the flour, baking powder, baking soda and salt.
  4. Add to creamed mixture alternately with buttermilk just until mixed.
  5. Transfer half of the mixture to a 9-in. x 5-in. loaf pan coated with cooking spray.
  6. Combine cinnamon and remaining sugar.
  7. Sprinkle three-fourths of mixture over batter. Top with remaining butter and sprinkle with remaining cinnamon mixture.
  8. Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
