Ingredients

  • 0.5 tsp almond extract 
  • tsp baking soda 
  • cup chai concentrate 
  • tsp cinnamon 
  • 0.5 cup coconut flakes flaked
  • 0.3 tsp ginger for a spicier cake (use more )
  • 0.3 cup oatmeal instant uncooked quick (not )
  • 0.5 tsp salt 
  • 0.8 cup sugar (I used demerara)
  • 0.5 cup unbleached flour white
  • 0.3 cup apple sauce unsweetened
  • tsp vanilla extract 
  • tbsp vinegar 
  • cup flour whole wheat

Directions

  1. Combine the dry ingredients (oatmeal through sugar) in a medium-sized mixing bowl.
  2. Add the chai, applesauce, vinegar, extracts, and all but 2 tablespoons of the coconut.
  3. Mix well, and pour the batter into the prepared pan.
  4. Sprinkle with the reserved coconut and bake for about 25 minutes, or until a tester inserted into the center of the cake comes out clean.
  5. Serve warm or at room temperature.
