  • 15.5 ounce chickpeas rinsed drained canned (garbanzo beans)
  • 1.5 cups couscous uncooked
  • cup cucumber peeled chopped
  • 1.5 tablespoons olive oil extravirgin
  • ounces feta cheese crumbled
  • teaspoons ginger fresh grated peeled
  • tablespoons mint leaves fresh finely chopped
  •  garlic clove minced
  • 0.3 cup green onions thinly sliced
  • 0.8 teaspoon ground cumin 
  • 0.5 teaspoon ground turmeric 
  • 0.3 cup juice of lime fresh
  • 0.5 cup raisins 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon sugar 
  • cup tomatoes chopped
  • cups water

Directions

  1. To prepare dressing, combine first 8 ingredients, stirring with a whisk.
  2. To prepare salad, bring 2 cups water to a boil in a medium saucepan, and gradually stir in couscous, raisins, and turmeric.
  3. Remove from heat; cover and let stand 5 minutes. Fluff with a fork.
  4. Place couscous mixture in a large bowl.
  5. Add tomato and remaining ingredients.
  6. Drizzle with dressing; stir well to coat. Cover and chill at least 1 hour.
