  • tablespoons balsamic vinegar 
  • 0.3 teaspoon pepper black
  • 1.5 cups couscous uncooked
  • 15.8 ounce less-sodium chicken broth fat-free canned
  • ounce feta cheese crumbled
  • 0.3 cup basil fresh thinly sliced
  •  garlic cloves minced
  • tablespoons olive oil extra-virgin divided
  • cups roasted boneless skinless chopped ( 2 breast halves)
  • 0.5 teaspoon salt 
  • 1.3 pounds tomatoes chopped

Directions

  1. Combine 1 tablespoon olive oil and garlic in a large microwave-safe bowl, and microwave at high for 45 seconds.
  2. Add the broth; microwave at high 4 minutes or until mixture simmers. Gradually stir in couscous; cover and let stand 5 minutes. Fluff with a fork. Stir in the tomato, chicken, basil, vinegar, salt, and pepper.
  3. Drizzle with 1 tablespoon oil, and sprinkle with cheese.
