Ingredients

  • teaspoons chili powder 
  • teaspoon coffee instant
  • 0.5 teaspoon ground cumin 
  • 0.5 teaspoon brown sugar packed
  • lb flank steak 
  • 0.5 teaspoon salt 
  • 0.3 teaspoon pepper 
  • lb fingerling potatoes red ( 20)
  • tablespoon butter melted
  • 0.3 teaspoon salt 
  • 0.3 teaspoon pepper 
  • tablespoons cheddar cheese shredded extra-sharp reduced-fat
  • tablespoons spring onion thinly sliced

  • plastic wrap
  • aluminum foil

  • broiler pan

Directions

  1. Set oven control to broil. Spray broiler pan with cooking spray. In small bowl, mix chili powder, coffee granules, cumin and brown sugar.
  2. Sprinkle steak with 1/2 teaspoon salt and 1/4 teaspoon pepper; rub with spice mixture.
  3. Place on broiler pan. Broil steak 4 inches from heat 12 minutes or until of desired doneness. Cover loosely with foil.
  4. Meanwhile, scrub potatoes; place in single layer in 9-inch square microwavable dish. Cover with microwavable plastic wrap, folding back corner to vent steam. Microwave on High 5 to 6 minutes or until tender.
  5. Let stand 5 minutes.
  6. Cut potatoes in half; place on cookie sheet.
  7. Drizzle with butter.
  8. Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper. Top evenly with cheese. Broil 2 minutes or until cheese is melted.
  9. Sprinkle with onions.
  10. Thinly slice steak across grain.
  11. Serve with potato skins.
