There is something genuinely comforting about a loaf of bread that carries the earthy, nutty depth of cracked wheat while maintaining the soft, inviting texture of a classic sandwich bun. This Cracked Wheat Bread recipe is a delightful vegetarian masterpiece that strikes a perfect balance between rustic charm and modern convenience, ready in just fifty-five minutes for a satisfying meal. What sets this recipe apart is the clever technique of simmering the cracked wheat first; this simple step transforms the grains, making them tender enough to blend seamlessly into the dough without compromising the loaf's structure or creating a gritty texture. The result is a bread with a beautifully golden crust and a tender crumb that feels incredibly rich thanks to the harmonious blend of softened butter, honey, and molasses. These ingredients work together to create a subtle sweetness that complements the savory notes of the whole wheat flour and salt, making it an ideal choice for both morning toast and hearty dinner rolls. With a nutritional profile that offers a satisfying mix of protein and carbohydrates, this loaf serves twelve people, making it perfect for feeding a family or gathering friends. Whether you are looking to add a wholesome grain twist to your baking repertoire or simply craving that perfect slice of homemade bread, this recipe delivers on every level. The process is straightforward, requiring nothing more than basic kitchen tools and a warm place for the dough to rise, ensuring that even novice bakers can achieve bakery-quality results at home. Enjoy the aroma of baking wheat and the joy of sharing fresh, wholesome bread with your loved ones.

Ingredients

  • 0.3 ounce active yeast dry
  • tablespoons butter softened
  • 0.5 cup cracked wheat
  • cups flour all-purpose
  • tablespoons honey
  • cup milk
  • tablespoons blackstrap molasses
  • tablespoon salt
  • 0.3 cup warm water (110 degrees F/45 degrees C)
  • cup flour whole wheat

Equipment

  • bowl
  • sauce pan
  • oven
  • loaf pan

Directions

  1. In a small saucepan, bring water to a boil. Stir in cracked wheat and simmer for 10 minutes; let cool to lukewarm. In a small bowl, dissolve yeast in warm water.
  2. Let stand until creamy, about 10 minutes.
  3. Pour the cracked wheat mixture into a large bowl. Stir in the butter, salt, molasses, honey, milk, yeast mixture, whole wheat flour and 2 cups of the bread flour; stir well to combine. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition.
  4. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
  5. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into two equal pieces and form into loaves.
  6. Place the loaves into two lightly greased 9x5 inch loaf pans. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  7. Bake in a preheated 375 degree oven 30 to 35 minutes, or until the loaves sound hollow when tapped on top and bottom. Cool on racks.
