Ingredients

  • cup cranberries fresh finely chopped
  • 1.5 tablespoons cilantro leaves fresh minced
  • 1.5 teaspoons ginger fresh grated
  •  green onions thinly sliced
  • teaspoon jalapeno minced seeded
  • ounces cream cheese softened reduced-fat
  • 1.5 teaspoons orange juice 
  • tablespoons sugar 
  • tablespoons walnuts finely chopped
  • 16  wheat crackers light shredded whole wheat

Equipment

    Directions

    1. Stir together first 6 ingredients; chill 2 to 3 hours.
    2. Stir together cream cheese and orange juice; stir in walnuts.
    3. Spread on crackers, and top with cranberry mixture.
    4. Serve immediately.
    5. NOTE: For testing purposes only, we used Snackwells Wheat Crackers.
