  • 0.3 cup all-natural apricot nectar 
  • 0.8 cup cheese blue crumbled
  • 0.3 cup canola oil 
  • teaspoons dijon mustard 
  • 0.5 cup cranberries dried
  • medium pears ripe sliced
  • 0.1 teaspoon pepper 
  • 0.3 cup red wine vinegar 
  • 12 cups the salad mixed
  • 0.3 teaspoon salt 
  • tablespoons sugar 
  • 0.5 cup walnut pieces chopped

Directions

  1. For dressing, in a large bowl, whisk together the first six ingredients; set aside. In a heavy small skillet, melt sugar over medium heat, stirring constantly.
  2. Add walnuts; stir to coat.
  3. Remove from the heat.
  4. In a large salad bowl, combine the greens, pears and cranberries.
  5. Drizzle with dressing.
  6. Sprinkle with nuts and blue cheese; toss to coat.
