  • 0.7 cup flour 
  • tsp lemon zest 
  • cup milk 
  • cup strawberry preserves 
  • Tbsp sugar 
  • Tbsp water

Directions

  1. Whisk eggs and milk in medium bowl until blended. Stir in flour.
  2. Let stand 30 min.
  3. Spray 8-inch skillet with cooking spray.
  4. Heat on medium heat.
  5. Pour 1/4 cup batter into skillet; tilt skillet to evenly cover bottom of skillet with batter. Cook 1 to 2 min. or until bottom of crpe is lightly browned. Run spatula round edge of crpe to loosen from pan; turn crpe. Cook 1 min. or until bottom of crpe is lightly browned.
  6. Remove from skillet; set aside. Repeat with remaining batter to make a total of 8 crpes.
  7. Beat cream cheese, sugar, lemon zest and juice until blended.
  8. Spread 2 rounded Tbsp. cream cheese mixture onto each crpe; fold into quarters.
  9. Place on dessert plates.
  10. Cook and stir preserves and water in saucepan on low heat 2 to 3 min. or until heated through. Spoon over crpes.
