Ingredients

  • 1.5 cups percent milk 
  • tablespoons evaporated milk fat free
  • teaspoons flour all-purpose
  • 20 ounce pkt spinach frozen thawed
  • pinch ground nutmeg 
  • 0.5 cup chicken broth low-sodium
  • teaspoons olive oil 
  • servings salt and pepper black freshly ground
  • 0.5 cup shallots finely chopped

Directions

  1. Watch how to make this recipe.
  2. Squeeze all of the water from the spinach. In a large pan, heat the oil over a medium heat.
  3. Add the shallots and cook, stirring, until softened, about 2 minutes.
  4. Add the flour and cook, stirring, for 30 seconds.
  5. Add the milk and broth and cook, scraping up any bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
  6. Add the spinach and simmer until tender, about 5 minutes. Stir in the evaporated milk and nutmeg and season to taste with salt and pepper.
